    • Rosemary, finely chopped – Fresh works best, but dried will do in a pinch.
    • Dried Oregano – You can substitute with thyme or Italian seasoning.
    • Garlic Powder – Fresh garlic can burn in this recipe, so powdered works best.
    • Smoked Paprika – one of our favorite spices providing a savory smoky flavor.
    • Ground Chipotle Pepper – Adds an extra smokiness and spicy flavor. You can substitute with chili powder and a sprinkle of cayenne for heat.
    • Gouda Cheese, shredded – Swap with cheddar or Gruyere.
    • Cotija Cheese — Cotija is one of our favorite Hispanic cheeses. It adds extra tangy flavor and depth. Grated Parmesan Cheese makes a suitable stand-in.
    • Melted Butter - Adds that rich buttery flavor and texture.
    • Extra Virgin Olive Oil – You can use other vegetable oils like Canola if that's what you have.
    • Kosher Salt and Black Pepper.

    Instructions

    How to Make this delicious, easy, and Spicy Potato Recipe

    1. Step 1: Preheat the oven to 400°F degrees. A preheated oven ensures more even cooking.
      We use unpeeled potatoes for crispness in this recipe. Clean and scrub them well with cold water.
    1. Step 2: Using a mandolin slicer, create thin slices of around 1/8 inch thickness. If you don’t have a mandolin, carefully use a sharp knife to achieve even slices.
    1. Step 3: Time to mix the ingredients in a large mixing bowl.
    1. Step 4: Toss the potato slices with butter, oil, herbs, cheese, and spices. Try to get every slice of potato covered for the best flavor.

    Step 5: Grease the muffin tray with cooking spray or brush with melted butter. Divide the slices of potatoes evenly among the potato cups. It’s ok if they stack up above the cup line.

    • All potatoes should fit perfectly among the 12 cups.
    • Cover the tray with foil (sprayed with non-stick spray) and bake for 30 minutes.
    • Remove the foil, and roast potatoes for another 20-25 minutes until the edges are golden brown and crispy. Remove from the oven, let them cool just enough to handle, and enjoy your Delicious Spicy Potatoes!

    Crispy Chipotle Herb Muffin Tin Potato Stacks – layers of thinly sliced potatoes, baked to perfection with a spicy herb kick. A simple, flavorful side dish in about 1 hour!


    Ingredients

    • 1/4 cup Extra Virgin Olive Oil
    • 1/2 teaspoon Kosher Salt
    • 1/2 teaspoon Black Pepper
