Description

This refreshing Peach Mango Salsa recipe is a refreshing blend of sweet peaches, ripe mango, veggies, and a hint of spice. Perfect as a dip, taco topping, or summer salad side!

Equipment needed: Large mixing bowl, sharp knife and a cutting board.


Ingredients

  • 2 Ripe Peaches
  • 1 Ripe Mango
  • 1/4 cup Red Onion (Finely diced)
  • 1/4 cup Red Bell Pepper
  • 1-2 Roma tomatoes
  • 1 Jalapeño
  • 1 Tablespoon of Cilantro (chopped)

Dressing Ingredients

  • 3 Tablespoons of Fresh Lime Juice (see notes)
  • 1 Lime Zest (from one lime)
  • 1 Teaspoon Honey
  • 1/2 Teaspoon Salt
  • 1 Tablespoon Extra Virgin Olive Oil (Optional).

Instructions

  • Dice the peaches and mango in about ½ inch cubes for a chunky salsa. The red onion, red pepper, tomatoes, and jalapeño in a smaller dice size, like 1/4" inch. The dice size is more up to the size and texture of your preference. You can keep it rustic or go for fine dice; it's your choice.
  • Mix in the diced fruits and veggies in a large bowl. Combining them gently is essential to avoid bruising the fruits.
  • Whisk the lime juice, zest, salt, honey, and extra virgin olive oil (if using) in a separate bowl. Toss in the chopped cilantro and mix.
  • Toss and Taste – Mix everything gently but thoroughly. Taste and adjust the salt. Need more sweetness? Add a dash of more honey. Want a higher spice level? Increase the Jalapeño Peppers.
  • Chill and Serve — For best results, let the flavors meld for 15-20 minutes. This salsa is great with tortilla chips or as a refreshing side.

Notes

- Fresh Lemon Juice or a splash of Orange Juice are suitable substitutes for Lime Juice.
- Soften the honey by warming it up for 5-7 seconds in the microwave for ease of mixing.
- Make this salad a main meal – Serve with rice, shrimp, or diced chicken to turn this salsa into a light, summery bowl. Or use it as a topping for fish tacos or pork chops.

Store leftover salsa in an airtight container in the refrigerator to keep it fresh. It’ll stay delicious for up to 2-3 days.
