Instructions
Step 1 - Preheat the oven to 400°F degrees. A preheated oven ensures more even cooking. We use unpeeled potatoes for crispness in this recipe. Clean and scrub them well with cold water.
Step 2 - Using a mandolin slicer, create thin slices of around 1/8 inch thickness. If you don’t have a mandolin, carefully use a sharp knife to achieve even slices.
Step 3 - Toss the potato slices with butter, oil, herbs, cheese, and spices. Try to get every slice of potato covered for the best flavor.
Step 4 - Grease the muffin tray with cooking spray or brush with melted butter. Divide the slices of potatoes evenly among the potato cups. It’s ok if they stack up above the cup line. All potatoes should fit perfectly among the 12 cups.
Step 5 - Cover the tray with foil (sprayed with non-stick spray) and bake for 30 minutes. Remove the foil, and roast potatoes for another 20-25 minutes until the edges are golden brown and crispy. Remove from the oven, let them cool just enough to handle, and enjoy your Delicious Spicy Potatoes!
