Spiced Apple Streusel Coffee Cake with Dulce de Leche
This apple streusel cake recipe combines a tender, buttery cake, spiced crumbly Streusel adorned with tart apple slices, and a melt-in-your-mouth dulce de leche drizzle.
Large bowl, Medium bowl, Small bowl, Round springform pan or square pan. Pastry blender (also known as a pastry cutter). Rubber spatula. Use an electric hand mixer (if desired), but you can easily make this cake by hand using a whisk and a rubber spatula, as shown in the pictures.
Ingredients
Ingredients for the Cake Batter
1 1/2cupsAll-purpose flour
1 1/2teaspoonsBaking powder
1/4teaspoonBaking Soda
1/4teaspoonSalt
1/4teaspoonGround Cinnamonsoftened at room temperature
6tablespoonButter
3/4cupWhite Sugar
2Eggs
2teaspoonsVanilla Extract
1/3cupNonfat plain Greek Yogurtsour cream is a suitable substitute
Ingredients for the Streusel (crumb topping):
1/4cupAll-purpose Flour
2tablespoonsBrown Sugar
1/2teaspoonGround Cinnamon
1/8teaspoonGround Cloves
2tablespoonsSalted Buttercold and cubed.
Ingredients for the Topping
2cupsthinly slicedunpeeled fresh apples (tart apples like Granny Smith, Honeycrisp, or Pink Lady work great)
3tablespoonsDulce de Leche + 1 tablespoon water to soften. I use La Lechera brand.
Instructions
Make the Cake Batter
Preheat the oven to 350°F and grease the cake pan.
In a medium bowl, create the flour mixture. Combine flour, baking powder, baking soda, and salt; set aside. Whisk until well mixed.
In a large mixing bowl, beat the six tablespoons of the softened Butter and sugar until light. Add yogurt, eggs, and vanilla, and blend well.
Incorporate the flour mixture and beat until well incorporated.
Spread the batter on the prepared pan.
Make the Cinnamon Streusel Topping
In a small bowl, combine streusel ingredients except Butter.
Cut in 2 tablespoons of cold Butter until crumbly using a pastry cutter or a large fork.
Ensure all ingredients are mixed well, and you have a well-integrated streusel.
Instructions for the Apples and Dulce de Leche Cake Toppings
Sprinkle half of the streusel topping over the batter.
Thinly slice the unpeeled apples into approximately 1/8 thick slices.
Arrange apple slices over the batter, staggering them in a circular shape starting from the outside and making your way to the middle of the cake.
Sprinkle the remaining streusel topping over the apples.
Bake at 350°F for 30-35 minutes or until a toothpick inserted in the center of the cake comes out clean. Cool for 10 minutes on a wire rack
In a microwave-safe bowl, combine dulce de leche and water and microwave for 20-30 seconds.
Drizzle over the apple cake. Enjoy!
