Creating this sugar-free simple syrup is a breeze with my easy-to-follow steps.
Traditional Simple syrup made with sugar uses equal parts water and sugar, but remember that the sweetness level of monkfruit is 200-300 times that of sugar.
The success of this recipe lies in maintaining a 2:1 ratio (2 parts water to 1 part sweetener) for the perfect consistency and taste.
Step 1: Cook
- In a small saucepan, combine water and monk fruit sweetener. Place it over medium heat and stir gently until the sweetener dissolves completely without boiling it.
- Once dissolved, remove the saucepan from the heat.
Step 2: Cool & Store
- Allow the syrup to cool, then transfer it to a glass jar or airtight container. Storing it at room temperature is ideal.
- The syrup will keep well for up to 5 days.

- Don’t refrigerate: Refrigerating the syrup is not recommended as it can cause the sweetener to crystallize, so make what you need to avoid excess leftovers.
- Doesn’t need to boil: Keep the mixture at medium heat only until the sweetener has dissolved.
- Thickness: Per Lakanto’s guidance, incorporate a pinch of xanthan gum as a thickening agent if you desire a thicker consistency. I never added this ingredient and the syrup worked perfectly for me.

This syrup typically keeps good at room temperature for a few days. My rule of thumb is 5-7 days. I would reccomend no more than 5 days at room temperature for a rosemary version. Thank you.
