    What exactly is Monk Fruit Sweetener?

    Monk Fruit or Monkfruit is a natural sweetener extracted from the Luo Han Guo, a fruit native to Southeast Asia that mirrors the taste of table sugar. It's been used in traditional Chinese medicine for centuries.

    The monk fruit extract boasts a sweetness level 200-300 times that of sugar, with virtually no calories or net carbs. Plus, it doesn't have the bitter aftertaste of some natural or artificial sweeteners, making it a great replacement for table sugar in the preparation of sweet treats.

    Simple syrups are very handy, and this recipe was a key ingredient in this sugar-free version of Skinny Passion Fruit Margarita. 

    This recipe can easily be a substitute ingredient in these delightful beverages, too, for a sugar-free version:

    • Pisco Sour
    • Mexican Paloma
    • Agua de Jamaica (Hibiscus Iced Tea)

    This recipe uses simple ingredients and requires minimal equipment. All you need is a small saucepan for cooking and a glass jar with a lid for storing.

    2 simple ingredients, 5 minutes to prepare.

    • 1/3 cup Monk Fruit Sweetener (Lakanto is a popular brand of monk fruit sweeteners and the one I typically use)
    • 2/3 cup of Water.

    Note: To help prevent crystals in your simple syrup, try using distilled water, which has removed impurities that can trigger crystallization.

    Instructions

    Creating this sugar-free simple syrup is a breeze with my easy-to-follow steps.

    Traditional Simple syrup made with sugar uses equal parts water and sugar, but remember that the sweetness level of monkfruit is 200-300 times that of sugar.

    The success of this recipe lies in maintaining a 2:1 ratio (2 parts water to 1 part sweetener) for the perfect consistency and taste.

    Step 1: Cook

    • In a small saucepan, combine water and monk fruit sweetener. Place it over medium heat and stir gently until the sweetener dissolves completely without boiling it.
    • Once dissolved, remove the saucepan from the heat.

    Step 2: Cool & Store

    • Allow the syrup to cool, then transfer it to a glass jar or airtight container. Storing it at room temperature is ideal.
    • The syrup will keep well for up to 5 days.

    Top tips

    • Don’t refrigerate: Refrigerating the syrup is not recommended as it can cause the sweetener to crystallize, so make what you need to avoid excess leftovers.
    • Doesn’t need to boil: Keep the mixture at medium heat only until the sweetener has dissolved.
    • Thickness: Per Lakanto’s guidance, incorporate a pinch of xanthan gum as a thickening agent if you desire a thicker consistency. I never added this ingredient and the syrup worked perfectly for me.

    • Sugar-free maple syrup: Consider adding a teaspoon of maple extract for a touch of autumnal flavor, or even mix in some pure maple syrup.
    • Vanilla syrup: Infuse your syrup with a 1/4 teaspoon of Vanilla Extract.
    • Citrus syrup: Add 1/4 teaspoon of Lemon zest to the cooking process for a refreshing twist, then strain it before storing it.

    Equipment

    Store in a glass jar or airtight container at room temperature for optimal taste texture and to avoid crystallization. This is the best way to keep it fresh for up to 5 days. Refrigerating the syrup will cause crystals to form..

    Notes

    Crystallization can happen in a simple syrup made with Monk Fruit sweetener. Some tips for success:
    1.    Distilled water: To help prevent crystals in the syrup, try using distilled water, which has removed impurities that can trigger crystallization.

      How long will this keep if it’s not in the fridge? If I use it to make an herbal syrup (I’m wanting to make rosemary) would it spoil at room temp?

        Hi Monique,
        This syrup typically keeps good at room temperature for a few days. My rule of thumb is 5-7 days. I would reccomend no more than 5 days at room temperature for a rosemary version. Thank you.
