Why You'll Love These Muffin Tin Potatoes
These potatoes are more than just another dish; they're the ultimate delicious side dish for any occasion. Here's why:
- Special Occassions: Perfect for Christmas dinners or other holiday feasts, these potato stacks are ideal for impressing your guests.
- Crispy: Every bite delivers that golden, crispy potatoes exterior with a soft, creamy interior.
- Beautiful Presentation: Whether it's a fancy dinner party or a simple weeknight meal, these will steal the show with their fun look and smoky potatoes flavor.
Equipment you'll need
- Large bowl
- Mandolin Slicer (to get slices with a consistent thickness), or a sharp knife.
- Cooking Spray
- Muffin Tray (with a standard muffin cups size).
Top Tips for the Best Chipotle Stacked Potatoes
- Look for the same-size potatoes: Using potatoes of the same size and diameter as your muffin tin makes the stack fit nicely. Long and narrow-sized potatoes work nicely for an evenly shaped stack.
- Use a mandolin slicer for perfect thinly sliced potatoes consistency.
- Grease the muffin pan well: Use cooking spray or brush with melted butter. This makes it easier to scoop out the stacks from the pan.
- Serve immediately: These potatoes are best enjoyed fresh from the oven for ultimate crispiness. Reheating can compromise that signature crunch.
Ingredients and Substitutions
This Chipotle Potato Stacks recipe packs a flavorful punch with herbs and a blend of spices. Here's what you need:
See the Printable recipe card at the bottom of this post for quantities.
- Small to medium Yukon Gold Potatoes – Russet potatoes work, too, but Yukon gives a creamy buttery bite.
- Rosemary, finely chopped – Fresh works best, but dried will do in a pinch.
- Dried Oregano – You can substitute with thyme or Italian seasoning.
- Garlic Powder – Fresh garlic can burn in this recipe, so powdered works best.
- Smoked Paprika – one of our favorite spices providing a savory smoky flavor.
- Ground Chipotle Pepper – Adds an extra smokiness and spicy flavor. You can substitute with chili powder and a sprinkle of cayenne for heat.
- Gouda Cheese, shredded – Swap with cheddar or Gruyere.
- Cotija Cheese — Cotija is one of our favorite Hispanic cheeses. It adds extra tangy flavor and depth. Grated Parmesan Cheese makes a suitable stand-in.
- Melted Butter - Adds that rich buttery flavor and texture.
- Extra Virgin Olive Oil – You can use other vegetable oils like Canola if that's what you have.
- Kosher Salt and Black Pepper.
Instructions
How to Make this delicious, easy, and Spicy Potato Recipe
- Step 1: Preheat the oven to 400°F degrees. A preheated oven ensures more even cooking.
We use unpeeled potatoes for crispness in this recipe. Clean and scrub them well with cold water.
- Step 2: Using a mandolin slicer, create thin slices of around 1/8 inch thickness. If you don’t have a mandolin, carefully use a sharp knife to achieve even slices.
- Step 3: Time to mix the ingredients in a large mixing bowl.
- Step 4: Toss the potato slices with butter, oil, herbs, cheese, and spices. Try to get every slice of potato covered for the best flavor.
Step 5: Grease the muffin tray with cooking spray or brush with melted butter. Divide the slices of potatoes evenly among the potato cups. It’s ok if they stack up above the cup line.
- All potatoes should fit perfectly among the 12 cups.
- Cover the tray with foil (sprayed with non-stick spray) and bake for 30 minutes.
- Remove the foil, and roast potatoes for another 20-25 minutes until the edges are golden brown and crispy. Remove from the oven, let them cool just enough to handle, and enjoy your Delicious Spicy Potatoes!
Recipe Variations
Want to get creative? Try these twists:
- Use Sweet Potatoes instead of Yukon Golds for a sweeter spin.
- Add Crispy Bacon Bits for an extra layer of indulgence.
Storage suggestions
Store leftovers in an airthight container in the fridge. Leftover potatoes can be reheated in the oven or air fryer to restore some of that original crispiness.
There you have it – the Muffin Pan Potatoes take on chipotle-flavored crispy goodness! Whether you love spicy food or want to try something new, these stacks are some of the best potatoes you'll ever make. They're not only fantastic but truly delightful.
So, what are you waiting for? Next time, skip the mashed potatoes and impress your guests with these flavorful stacks. Happy cooking!
