Instructions
Make the Pumpkin Cream
In a medium bowl, beat mascarpone at room temperature, pumpkin purée, pumpkin pie spice, vanilla, and brown sugar using a mixer with the whisk attachment. Scrape with a rubber spatula. Add chilled heavy whipping cream and mix until lightly whipped.
Make the Coffee Mixture
In a shallow bowl, combine brewed coffee, brown sugar, vanilla, and rum (if using). Whisk until dissolved to create the coffee mixture for dipping.
Make the Whipped Cream Topping
In a separate bowl, beat cold cream and powdered sugar until soft peaks form. Keep chilled.
Assemble the Tiramisu Cups
Cut the ladyfinger cookies in half. Add a spoonful of the pumpkin cream mixture to each cup. Dip ladyfingers briefly into the coffee mixture, then layer two halves in a single layer. Repeat with more cream, coffee-soaked ladyfingers, and the remaining pumpkin cream. You use 2 ladyfingers cut in half per cup.
Top with whipped cream, then cover with plastic wrap and chill. For the best results, serve the next day. Remove the cups from the refrigerator about 10 minutes before serving.

Notes
Cheese: Mascarpone is the base for the classic Tiramisu. Cream Cheese works as a substitute if you prefer a tangier filling or cannot find Mascarpone.
Pumpkin: Do not use pumpkin pie filling, which already has added sugar and spices. Pure pumpkin puree is the essence of this recipe and a great way to use leftover pumpkin puree.
