    Yuca Fries in the Air Fryer with Garlic Cilantro Lime Sauce

    These Air Fryer Yuca Fries are a healthier way to enjoy this classic Latin side dish, skipping deep frying but keeping every bit of crispy texture. This easy air fryer yuca fries method delivers crispy yuca with perfect texture every time — pure Latin comfort food with a lighter twist, no sacrifice on flavor.

    Yuca root is a starchy root vegetable known by the scientific name Manihot esculenta — also called cassava roots — and it's what gives these fries their signature texture. Yuca grows widely across South America and Latin America, where it's been a kitchen staple for generations. Compared to regular potato fries, yuca has a lower glycemic index and a naturally rich, buttery flavor thanks to its cassava starch.

    Whether we call them yuca fries or cassava fries, they're one of my favorite foods, and they always remind me of my Venezuelan home.

    Beyond fries, there are different ways to enjoy cassava: thinly sliced cassava chips (try this yuca chips recipe from A Sassy Spoon), baking with cassava flour, or simmering the root in savory dishes. But the best part of this recipe is dipping crispy cassava fries into a good dipping sauce like my Garlic Cilantro Lime sauce.

    This Yuca recipe was inspired by my healthier takes on Crispy Tostones (Baked Green Plantains) and my Oven Baked Plantain Chips, two recipes that bring Latin comfort foods to the table with a lighter twist.

    Fresh vs. Frozen Yuca

    Both fresh and frozen yuca work in this recipe, though frozen is the easier option for most home cooks. You may find fresh yuca in the produce section of an international market or well-stocked grocery store — just look for firm roots without soft spots, since fresh yuca has a thick skin that needs to be removed with a vegetable peeler or very sharp knife before cooking.

    Where I live, good raw yuca can be hard to come by, so I almost always reach for frozen yuca instead. I like the Goya Frozen Yuca - it's peeled and pre-cut, and in my experience it cooks more evenly and turns out more tender than fresh yuca that's traveled a long way to the store.

    Oil and Seasonings

    I use olive oil to coat the fries before air frying, though avocado oil or another vegetable oil works just as well. A simple spice mixture of kosher salt and black pepper lets the yuca shine — for extra flavor, stir a little garlic powder and onion powder into the mix.

    The Cilantro Garlic Sauce for Dipping

    The Cilantro Garlic dipping sauce is made with Greek yogurt, mayo, olive oil, jalapeño, lime, garlic, and cilantro — creamy, bright, and lighter than a traditional mayo-based salsa de ajo, making it the perfect snack sauce for these fries. A citrusy mojo sauce is a great swap if you want to change things up. You can also pair these fries with my Peruvian Aji Verde or our famous Venezuelan Guasacaca sauce. All three equally delicious!

    Instructions

    1. Prep time is about 15 minutes, plus 10 minutes to air fry.
    2. Peel and cut the yuca into pieces, then boil in a large pot or dutch oven with enough water over medium-high heat until fork-tender — usually 10–15 minutes. (Skip the instant pot here; it tends to overcook the yuca.)
    3. Remove with a slotted spoon, cool completely on paper towels, and slice into fry-shaped sticks on a cutting board.

    1. Prepare the Oil Seasoning and brush fries: Preheat the air fryer to 400°F.
      In a small bowl, whisk olive oil, salt, and pepper to create a simple spice mixture.

    1. Using a kitchen brush, lightly coat the yuca sticks on all sides. The goal is a thin coating rather than soaking the fries. This helps prevent excess oil while still allowing the fries to crisp during the chosen cookimg method.

    1. Step 3: Arrange the fries in a single layer inside the air fryer bsaket. Avoid overcrowding so air can circulate around each piece. Cook for 10 minutes, turning halfway through. Cooking time may vary depending on the thickness of the fries and your air fryer model.

    1. Continue cooking until the fries are golder brown and crisp for the crispy results.
    2. Serve immediately with the garlic cilantro sauce as a good dipping sauce

    Make the Cilantro Garlic Sauce

    1. Prep the Ingredients - Wash and roughly chop the cilantro. Deseed the jalapeño if you want a milder sauce. Peel the garlic cloves.
    2. Blend the Sauce - Add all sauce ingredients to a food processor and blend until smooth and creamy.
    3. Taste and Adjust - Taste the sauce and adjust salt, lime juice, or jalapeño to your preference. This creamy sauce makes a good dipping sauce for the fries!

    Recipe Variations

    • Extra Savory - Add ¼ teaspoon each garlic powder and onion powder to the seasoning. 
    • Mojo Sauce: Swap the cilantro sauce for a classic Cuban mojo. Here is a delicious mojo recipe from my friend Cari’s blog.
    • Baked Method: Arrange on a parchment paper-lined baking sheet and bake at 350°F for 20 minutes, until golden.

    Storage suggestions

    Yuca fries stay fresh for up to 3 days when stored in an airtight container in the fridge. Reheat them in the air fryer instead of the microwave — a few minutes at 350°F brings back the crispy results without turning them soggy.

    Can I make yuca fries without an air fryer?

    Yes, you can bake yuca fries instead of using an air fryer as your cooking method. Arrange the boiled and seasoned yuca in a single layer on a parchment paper-lined baking sheet and bake at 350°F for about 20 minutes, until golden brown. The air fryer gives a slightly crispier result with less oil, but the oven method works well if that's what you have on hand.

    Why aren't my yuca fries crispy?

    Overcrowding the air fryer basket is the most common reason yuca fries turn out soft instead of crispy. When the fries are stacked or touching, steam gets trapped and adds excess oil instead of helping them crisp, so arrange them in a single layer with a little space between each piece. Boiling the yuca until just fork-tender, not mushy, before air frying also helps keep the final texture perfect.

    • 1/3 cup Olive oil or any vegetable oil
    • 1/2 teaspoons Kosher salt
    • 1/2 teaspoons Black pepper

    Ingredients for the Dipping Sauce

    • 1 cup Greek yogurt
    • 1 tablespoon Mayonnaise
    • 2 tablespoon Olive oil
    • 1 Jalapeño pepper
    • 1 Lime juiced
    • 1 Fresh garlic clove
    • 1/2 Teaspoon kosher salt
    • 1/3 Teaspoon black pepper
    • 1 cup Fresh cilantro leaves

    Instructions

    Make the Fries

    • Boil the yuca: Peel and cut the yuca into large pieces, then boil in a large pot or dutch oven with enough water over medium-high heat until fork-tender — usually 10–15 minutes. (Skip the instant pot here; it tends to overcook the yuca.)
    • Cool and cut into fries: Remove the cooked yuca with a slotted spoon and place on paper towels to cool completely. Once cooled, cut the yuca pieces into fry shapes on a cutting board.
    • Season the fries: Preheat the air fryer to 400°F. In a small bowl, whisk together 0.3 cups olive oil (for fries), 0.5 teaspoons kosher salt (for fries), and 0.5 teaspoons black pepper (for fries) to make a simple spice mixture. Using a kitchen brush, lightly coat the yuca sticks on all sides — just enough to help them crisp without excess oil.
    • Air fry until golden: Arrange the fries in a single layer in the air fryer basket, avoiding overcrowding so air can circulate. Cook for 10 minutes 10:00, turning halfway through, until golden brown and crisp for the best results. Serve immediately with the garlic cilantro sauce.

    Make the dipping sauce

    • Wash and roughly chop the cilantro. Deseed the jalapeño for a milder sauce if desired, and peel the garlic. Add 1 cups Greek yogurt, 1 tablespoons mayonnaise, 2 tablespoons olive oil (for sauce), 1 jalapeño pepper, 1 lime, juiced, 1 fresh garlic clove, 0.5 teaspoons kosher salt (for sauce), 0.3 teaspoons black pepper (for sauce), and 1 cups fresh cilantro leaves to a food processor and blend until smooth and creamy. Taste and adjust salt, lime juice, or jalapeño to your preference.
