This Creamy Chipotle Chicken Pasta recipe delivers pure comfort with simple ingredients in a quick one pot meal. A rich creamy sauce coats tender pieces of chicken and pasta in a spicy chipotle sauce. The best part is the spicy chipotle chicken pasta finish, a flavorful pasta dish with a spicy kick that can be mild or bold based on your heat preference.

Chicken Chipotle Pasta in beige bowl

This creamy pasta recipe has become one of my favorite dishes when I want something easy that still feels like take-out at home. This pasta dish started as a simple weeknight idea (similar to this Spicy Shrimp Bowl) and quickly turned into a spicy chicken chipotle pasta recipe I make on repeat. If you love spicy pastas, this one checks every box without extra effort.

❤️Why you'll love this Creamy Pasta recipe

    • Perfect Weeknight Dinner - this recipe fits any night of the week thanks to its one-pot method and under-an-hour cook time (just like this Arroz con Pollo!), making it a perfect dish when dinner needs to be simple and satisfying.
    • Restaurant-Style Comfort at Home - it has the same rich, comforting feel you expect from your favorite restaurants, turning an easy homemade meal into something that feels special without extra work.

    Equipment you'll need

    • Cutting board for prepping the chicken and ingredients
    • Mixing bowl to marinade the chicken
    • Large skillet or deep pan for cooking the pasta and sauce in one pot. A non-stick pan is best to prevent sticking.

    Ingredients and Substitutions

This recipe relies on simple ingredients that come together into a bold, spicy chipotle cream sauce with deep chipotle flavor.

    Chicken Ingredients Notes

Chicken marinade ingredients for Chicken Chipotle Pasta

    • Boneless skinless chicken breasts – lean and quick-cooking; chicken thighs are a great substitute for a richer bite.
    • Lemon Juice and Zest – adds brightness; lime juice works just as well.
    • Soy Sauce – adds savory depth and extra flavor.
    • Smoked Paprika – reinforces the smoky chipotle profile.
    • Olive Oil, Kosher Salt, and Black Pepper – for seasoning and cooking.

    Pasta + Sauce Ingredients Notes

This combination delivers a creamy, spicy pasta with adjustable heat and plenty of depth, making it easy to customize without complicating the recipe.

pasta ingredients for Chicken Chipotle Pasta
    • Spaghetti Noodles – what I used here; short pastas like penne pasta is a great substitute and works well with this type of pasta sauce.
    • Olive Oil – used to sauté the vegetables and garlic.
    • Mushrooms and Corn – add texture and subtle sweetness.
    • Fresh Garlic / minced garlic – builds the base flavor of the sauce. Garlic Powder can be used in a pinch.
    • Chicken Broth – loosens the sauce and adds savory balance.
    • Heavy Cream – creates the rich, creamy base for the spicy chipotle cream sauce.
    • Chipotle Peppers blended into chipotle in adobo sauce – use 1½ tablespoons for milder heat or 2 tablespoons for bolder smoky chipotle flavor. Save the remainder of the can for marinades, soups, or this Tomatillo-Chipotle Salsa.
    • Cotija Cheese – an extraordinary Mexican Cheese that adds a salty finish and extra flavor to any dish like this Green Sauce. Grated parmesan cheese is an acceptable substitute.

    Step-by-Step Instructions

This Creamy Chipotle Pasta comes together through a straightforward cooking process with minimal prep and easy transitions between steps. The total cooking time stays under an hour, making it realistic for busy days without sacrificing comfort. You can use the same pot for cooking the pasta and the sauce.

    1. Marinate the chicken: Mix all marinade ingredients in a mixing bowl (lemon juice, soy sauce, smoked paprika, lemon zest, olive oil, salt, and black pepper)
    2. Slice the chicken breasts into strips and add them to the mixing bowl with the marinade.
    1. Toss until every piece is evenly coated. Let the chicken sit while you prep the remaining ingredients.
    2. Cook the Spaghetti: Bring a large pot or deep pan of water to a rolling boil and salt it generously. Add the pasta and cook until al dente, following package timing. Drain and set aside, keeping it nearby for assembling the dish.

    1. Cook the Chicken: Using the same pot you used to cook the pasta, heat it over medium heat. Drizzle in a little olive oil, then cook the marinated chicken in batches, taking care not to overcrowd the pot.

Cook each side for about 2–3 minutes, adjusting for thickness. the internal temperature should reach 165° F. Let the chicken rest, loosely covered, at room temperature to lock in that juicy chicken texture.
    1. Make the pasta sauce: Lower the heat to medium low and add more olive oil if needed. Add the mushrooms, corn, and minced garlic, cooking for 3–4 minutes until softened.
    1. Stir in the chipotle puree along with salt and pepper, then pour in the chicken broth.
    1. Let it simmer gently. Scrape up the bottom of the pan as needed to release flavor.

    1. Pour in the heavy cream, adjusting the spice level to taste.
    1. Add the chicken back to the pan and let it simmer for 1–2 minutes.
    1. Assemble the pasta and finish the dish: Add the cooked pasta directly to the pan and toss until fully coated in the creamy chipotle sauce. Gently mix until everything is warmed through and evenly combined.

    1. Finish with cotija, some chives and cilantro, and serve right away.
    Chicken Chipotle Pasta

This spicy chicken pasta recipe is the kind of meal you’ll want to keep in your regular rotation. It’s comforting, easy to make, and delivers big flavor without extra steps. If you enjoy creamy sauces with a little heat, this spicy chicken pasta is one you’ll come back to again and again.

    Recipe Variations

This recipe is easy to adapt based on what you have on hand or the flavors you enjoy most. Add sliced bell peppers for extra color and texture — red bell pepper, yellow bell pepper, or a mix of red peppers and sweet peppers all work well. Thinly sliced yellow onion adds a subtle sweetness and depth that pairs nicely with the creamy chipotle sauce. Sauté the vegetables before adding the cream so they soften and blend smoothly into the dish.

    Storage and re-heating suggestions

Store leftover pasta in an airtight container in the refrigerator for up to 3 days. The sauce will thicken as it chills, which is normal for cream-based pasta dishes.

To reheat, warm gently on the stovetop over medium-low heat, adding a splash of chicken broth, milk, or cream to loosen the sauce as needed. Stir occasionally until heated through. You can also reheat individual portions in the microwave using short intervals, stirring between each one for even warming.

Tip: Avoid high heat when reheating to keep the sauce smooth and prevent separation.

    Top Tip

For best flavor and texture, the chicken can be prepped ahead and marinated overnight.

      Notes

      • Fresh Garlic / Minced Garlic – Builds the base flavor of the sauce. If needed, ¾ teaspoon garlic powder can be used as a substitute.
      • Chipotle Peppers
        • You can use store-bought chipotle puree, chipotle sauce, or make your own by blending canned chipotle peppers in adobo sauce. Save the remainder of the peppers for marinades, soups, or to make this delicious Tomatillo-Chipotle Salsa.
        • This recipe uses 2 tablespoons of chipotle puree for a bolder smoky chipotle flavor, resulting in a medium-hot pasta. For a milder heat level, use 1 to 1½ tablespoons.
      • Cotija Cheese – A Mexican cheese that adds a salty finish and extra flavor to the dish. Grated Parmesan cheese works well as a substitute.

I tried this chipotle chicken pasta, and the smoky heat was exactly what I was craving. It’s a great way to change up a standard pasta night with a bit of a bold, creamy kick.
