- Spaghetti Noodles – what I used here; short pastas like penne pasta is a great substitute and works well with this type of pasta sauce.
- Olive Oil – used to sauté the vegetables and garlic.
- Mushrooms and Corn – add texture and subtle sweetness.
- Fresh Garlic / minced garlic – builds the base flavor of the sauce. Garlic Powder can be used in a pinch.
- Chicken Broth – loosens the sauce and adds savory balance.
- Heavy Cream – creates the rich, creamy base for the spicy chipotle cream sauce.
- Chipotle Peppers blended into chipotle in adobo sauce – use 1½ tablespoons for milder heat or 2 tablespoons for bolder smoky chipotle flavor. Save the remainder of the can for marinades, soups, or this Tomatillo-Chipotle Salsa.

- Marinate the chicken: Mix all marinade ingredients in a mixing bowl (lemon juice, soy sauce, smoked paprika, lemon zest, olive oil, salt, and black pepper)
- Slice the chicken breasts into strips and add them to the mixing bowl with the marinade.

- Toss until every piece is evenly coated. Let the chicken sit while you prep the remaining ingredients.
- Cook the Spaghetti: Bring a large pot or deep pan of water to a rolling boil and salt it generously. Add the pasta and cook until al dente, following package timing. Drain and set aside, keeping it nearby for assembling the dish.

- Cook the Chicken: Using the same pot you used to cook the pasta, heat it over medium heat. Drizzle in a little olive oil, then cook the marinated chicken in batches, taking care not to overcrowd the pot.
Cook each side for about 2–3 minutes, adjusting for thickness. the internal temperature should reach 165° F. Let the chicken rest, loosely covered, at room temperature to lock in that juicy chicken texture.

- Make the pasta sauce: Lower the heat to medium low and add more olive oil if needed. Add the mushrooms, corn, and minced garlic, cooking for 3–4 minutes until softened.

- Stir in the chipotle puree along with salt and pepper, then pour in the chicken broth.

- Let it simmer gently. Scrape up the bottom of the pan as needed to release flavor.

Pasta
- 8 ounces Spaghetti (any short pasta will work too)
Instructions
This recipe can yield 4 large or 6 small servings. For best flavor and texture, the chicken can be prepped ahead and marinated overnight.
Marinate the chicken
- Slice the chicken breasts into strips. In a mixing bowl, combine lemon juice, soy sauce, smoked paprika, lemon zest, olive oil, salt, and black pepper. Add the chicken and toss until evenly coated. Set aside while prepping the remaining ingredients.
Cook the pasta
- Bring a large pot of salted water to a boil. Cook the pasta until al dente according to package directions. Drain and set aside.
Cook the chicken
- Using the same pot, heat over medium heat and add a drizzle of olive oil. Cook the chicken in batches, about 2–3 minutes per side, until cooked through and lightly browned. Internal temperature should reach 165°F. Remove from the pot and set aside covered.
Make the sauce
- Lower the heat to medium-low and add olive oil if needed. Add mushrooms, corn, and garlic and cook for 3–4 minutes until softened. Stir in chipotle puree, salt, and pepper. Pour in chicken broth and scrape the bottom of the pot to release flavor.
Finish the sauce
- Add heavy cream and stir to combine. Adjust heat level to taste. Return the chicken to the pot and simmer for 1–2 minutes.
Assemble the pasta
- Add the cooked pasta to the sauce and toss until fully coated. Stir in cotija cheese just before serving. Finish with some chives and cilantro, and serve right away.
