Skirt steak is a long, slightly marbled flat cut often used for Carne Asada. I love it because it offers great flavor, tenderness, and affordability. It is easy to cook pan-seared (think hot cast-iron skillet), grilled, and even broiled. It is similar to Flank steak but less expensive and just as flavorful. - Flank or Flat-iron steaks are great substitutes if you cannot find Skirt steak. These are all flavorful cuts.

Chimichurri Sauce ingredients
- Olive Oil (Extra Virgin preferred)
- Red Wine Vinegar - Apple Cider Vinegar is a suitable substitute if necessary.
- Fresh Garlic
- Flat Italian Parsley
- Red Chili Pepper Flakes
- Dried Oregano
- Water
- Coarse Salt (like Kosher) and Black Pepper
- Sugar (optional)
Instructions
Step 1 - Prepare the Steak
I like to grill the steak with only salt and pepper in this recipe. Then add the Chimichurri sauce as a condiment at the dinner table. I like this method better than marinating the meat in the Chimichurri because I think this allows you to savor the texture and flavors of the meat better, then get that flare of flavors from the fresh Chimichurri (the way its meant to be eaten). But you can marinate the steak in the Chimichurri before grilling if you'd like, and it's also delicious.
- Take the steak out of the fridge 30 minutes before starting cooking.
- Season each side of the steak with salt and pepper and let it sit on a plate while you make the Chimichurri. This will allow the salt to make its way into the meat and make it more flavorful.
Step 2 -Make the Chimichurri Sauce
- Crush the garlic with a garlic presser (best method to get the best flavor) or finely mince them.
- Finely chop the parsley and then measure until you have 1/4 cup.
- Combine with all remaining ingredients in a medium-sized bowl and mix well with a spoon.
- Let it sit at room temperature to let the flavors meld. Ideally, let it sit for an hour if time allows before serving.
Pro Tips for the best Chimichurri Sauce
- Do not skip the Red Wine Vinegar! Chimichurri can only be called Chimichurri if it contains vinegar, especially red wine. The acidity of the vinegar is critical to the Chimichurri flavor.
- Oregano is also a vital ingredient of a well-rounded Chimichurri. Do not substitute with fresh oregano because Dried Oregano's more robust flavor and texture is a hallmark of Chimichurri.
- The chimichurri can be made ahead but should be kept refrigerated. It is best if used within 24-48 hours.
Step 3 -Grill the Steak
- Skirt steak is optimally grilled to medium-rare because meat continues to cook once it is removed from the grill.
- Fire up your grill to preheat (charcoal is best for an authentic Argentinian steak flavor experience ๐).
- When your grill is fiery, place the steak on the grill. Skirt steak is a thin cut, so it will cook very quickly.
- Grill 3-4 minutes per side for medium-rare.
- Transfer to a plate and cover with foil. Let it rest for 10 minutes. Do not cut it until it has rested for 10 minutes to allow the juices to stay in the meat.
- After the meat has rested, transfer it to a cutting board and cut diagonal 1/4โ โ 1/2โ strips against the grain.
- Serve with Chimichurri drizzle all over it. And now you have Skirt steak with chimichurri!
Top tip
Don't overcook the steak! Sear the outside and cook 3-4 minutes per side for medium-rare. Meat continues to cook after being removed from the heat.
