    Pork Carnitas (Slow Cooked Mexican Pulled Pork) get elevated to Tex-Mex Carnitas-Style Fajitas with the addition of sauteed veggies and delicious fixings like pico de gallo, avocados, and a sprinkle of cheese.

    It starts with my Easy Carnitas recipe (Slow Cooker Mexican Pulled Pork), which only requires 5 minutes of prep and can be made ahead. The seasoned pork is slow-cooked until it turns juicy and savory and falls apart. Then it becomes the star along with sizzling bell peppers and yummy toppings for an effortless Tex-Mex Fajitas meal.

    I love this deliciously-crispy Pork Carnitas recipe because it's made mainly with simple ingredients found in your kitchen and requires minimal prep. Because the meat is seasoned and simmered in a slow cooker (a lifesaver appliance!), it is juicy and tender. A flavorful Mexican pulled pork without much time spent in the kitchen.

    This recipe is perfect for a weeknight meal. You can either make the Carnitas the day before or prep your meat and refrigerate it overnight, then start the slow cooker in the morning. Coming home from work and smelling this Carnitas when you walk in the door is divine! 
    Leftover Pork Carnitas are also great for salad bowls, burritos, quesadillas, and filling arepas. They also freeze and reheat beautifully for another quick and easy dinner that is healthy and satisfying.

    Ingredients needed for Tex-Mex Carnitas-Style Fajitas

    • My recipe for Easy Carnitas (Slow cooker Mexican pulled pork)
    • Onion cut into strips (I prefer red, but any variety will work)
    • Bell Peppers cut into strips (Green, red, yellow, or orange. Any will work)
    • Salt and Pepper
    • Sweet Spanish Paprika
    • Vegetable Oil

    TIP: A Cast Iron Skillet is recommended as it will give you that char of the restaurant-style bell peppers in Fajitas.  If you don’t own a cast iron skillet, ensure your pan is sizzling hot before adding the bell peppers.

    Putting together Carnitas Fajitas is easy and quick (less than 15 minutes!).

    1. Prepare the Pork Carnitas according to the directions.

    2. Saute the vegetables for Fajitas

    Heat a heavy cast-iron skillet (or a regular skillet) over medium-high heat until hot. Add the oil along with the sliced bell peppers and onions. Allow to sizzle for one minute, then season with the salt, pepper, and paprika. Sauté for an additional 1 to 2 minutes or until crisp tender, and the vegetables are charred.

    3. Assemble your meal

    To assemble your Mexican Pulled Pork Fajitas, heat flour tortillas on a skillet and top with the Carnitas and sautéed peppers and onions.

    Suggested toppings: My Aji Verde sauce, guacamole, Pico de Gallo, sour cream, avocados, sliced pickled jalapenos, lime wedges, cheese, or Tomatillo Chipotle Salsa.
    Serve with Mexican Rice and some beans or your favorite sides.

    Leftover Pork Carnitas Fajitas should be stored in an airtight container in the fridge. It will last up to 4 days.
    Reheat leftovers in a lightly oiled skillet over medium heat. If you have leftover pan juices from cooking the pork, in that case, you can drizzle them over the reheated Carnitas to restore moisture, as meat naturally dries up when refrigerated.

        Is it still valid to make Carnitas for Taco Tuesday? I think I'll just decide it is. The slow cooked pork, which I can prepare in advance and always have on hand in the freezer makes this such an easy Tuesday dish, that I can throw together in minutes on the day. With the toppings and veggies, it's just what I need for dinner!
