I made this Peach Avocado Salad and I couldn't resist making one last batch of fresh peach salsa before these juicy gems disappear for the year!     For this recipe, you won’t need much! Keep it simple with a large mixing bowl, for mixing all ingredients together. A small bowl if you’re prepping ingredients separately or for whisking the dressing. And a sharp knife and a cutting board for easy chopping.

    Ingredients and Substitutions

    To make this fantastic Peach Mango Salsa recipe, you’ll need the following simple ingredients.

    • Ripe peaches and Fresh Mango - nothing beats juicy ripe peaches and a delicious tropical sweetness from mangoes. If fresh peaches are not available, frozen peaches are a suitable substitute.
    • Red onion – raw onions add a bit of tang and color.
    • Red bell pepper - for a slight crunch and vibrant colors. You can substitute red with any colored bell peppers of your preference.
    • Fresh Roma Tomatoes - for a bit of classic salsa flavor. Halved cherry tomatoes work well too.
    • Jalapeño - for some spice! Adjust based on your heat preference.
    • Cilantro - fresh mint or fresh basil leaves can also work for a different twist or if you are not a fan of cilantro.

    Dressing Ingredients

    • Lime Juice - Fresh is best! In the absence of fresh limes, you can also sub with fresh lemon juice or a splash of orange juice.
    • Lime (zest) - Adds a zesty brightness. Trust me!
    • Honey - Optional, but it rounds out the flavor and an extra touch of natural sweetness. I like to soften it by warming it up for ease of mixing.
    • Salt - Balances the sweetness.
    • A touch of Extra Virgin Olive Oil (optional) - Adds depth, flavor, and a smoother texture.

    Optional Substitutions: For a slight twist, you can try substituting with Apple Cider Vinegar or Champagne Vinegar instead of lime juice. For extra crunch, toss in diced Persian Cucumbers.
    Want to make it creamy? Add Creamy avocado.

    • Whisk the lime juice, zest, salt, honey, and extra virgin olive oil (if using) in a separate bowl. Toss in the chopped cilantro and mix.
    • Toss and Taste – Mix everything gently but thoroughly. Taste and adjust the salt. Need more sweetness? Add a dash of more honey. Want a higher spice level? Increase the Jalapeño Peppers.
